Tiling is often used in MOCs to create a contrast between the studs of plates and bricks. However, some builders choose to go completely studless in an attempt to make their MOCs ultra realistic. I have even seen builds that make you double take because they are so stunning that they look like a real room, not one made of LEGO.
As seen in the picture, its important to tile up any surfaces that have studs and to use pieces that have flat edges. Its also good to not make things too blocky by using slopes and other specialist pieces such as leaf pieces to represent objects. Don't be scared to throw a few SNOT or other techniques in there, as long as it helps the build look more realistic.
